Running Buddies' Whole Wheat Zucchini Loaves

Introduction

Once a month I get together with the friends I run with to do some healthy, bigger-batch cooking. The second version of this recipe yields three regular-sized loaves or 10 mini loaves. We made a mixture of both. Bake minis for 45 minutes and regulars for one hour. Place minis onto a cookie sheet for easy handling in and out of the oven. These loaves are light, fluffy and very moist, a nice surprise for a whole wheat recipe. FYI, The big-batch version was too much batter for my counter-top mixer; we mixed it by hand. Ingredients

    For one loaf:

    3 large eggs
    1/4 cup vegetable oil
    1/2 cup unsweetened apple sauce
    3/4 cup lightly-packed brown sugar
    2 cups grated zucchini
    2 teaspoons vanilla extract
    2 cups whole wheat flour
    1/4 teaspoon baking powder
    2 teaspoons baking soda
    1 teaspoon salt
    2 1/2 teaspoons ground cinnamon
    1/2 teaspoon nutmeg
    1 cup of raisins, nuts or chocolate chips are optional and not included in nutrition information.


    For three loaves:
    9 eggs
    1/2 cups vegetable oil
    3 cups lightly-packed brown sugar
    6 cups grated zucchini
    2 tablespoons vanilla extract
    6 cups whole wheat flour
    3/4 teaspoon baking powder
    2 tablespoons baking soda
    1 tablespoon salt
    2 1/2 tablespoons ground cinnamon
    1/2 tablespoon nutmeg

    3 cups of raisins, nuts or chocolate chips are optional and not included in nutrition information.

Directions

In a large bowl, combine eggs, oil, sugar, zucchini, and vanilla. Mix well.

In an even bigger bowl, combine flour, baking powder, soda, salt and spices.

Stir wet ingredients into the dry to combine.

Stir in raisins, chocolate chips or nuts, if desired.

Bake at 350 degrees F (175 degrees C) for 1 hour (45 minutes for mini loaves) or until a tester inserted in the center comes out clean.
