Creamless Creamy Tomato Soup

Ingredients

4-5 lbs. fresh tomatoes
1 can (10 oz) diced tomatoes, no salt added (or more fresh tomatoes; I just added a can to bulk up the soup)
1 c. finely diced onion
2 cloves garlic, minced
1 can chicken broth (10 oz)
1/2 c. milk (I used 2%)
2 wedges Laughing Cow Light Swiss Cheese, room temperature
3 tbsp. butter or spread (I used Country Crock Light)
1 tbsp dried basil, or more to taste
salt & pepper to taste
Directions
Boil whole tomatoes until softened. Drain and set aside to cool before removing skins.
Meanwhile, in large stock pot, sautee garlic and onions in butter/spread until browned. Add whole peeled tomatoes, chicken broth, canned tomatoes, milk, Laughing Cow, basil, salt and pepper, and bring to a simmer.
I used a potato masher and a whisk to break down the cheese and tomatoes as the soup cooks. Allow to simmer, covered, for another 20-30 minutes, stirring occasionally.
Top with a little fresh parmesan cheese, and serve. Makes 5 generous portions.
