Preheat oven to 350 F. Cream margarine, sugar, pumpkin, eggs and vanilla and beat until creamy. Add in dry ingredients and mix well. Drop by teaspoonful onto cookie sheet, slightly flatten. Bake for 15-20 minutes.
These cookies were not great. They actually turned out more like flavorless dough lumps and tasted like uncooked flour. With regular Splenda (per the recipe) the cookies had nothing to caramelized. Will not make again.
