Peg's Couscous Salad

Ingredients

    Salad:
    1 Cup (Dry) Israeli Couscous
    1/2 Cup Craisins
    1 Medium Carrot, Chopped
    1 Medium Stalk Celery, Chopped
    1/2 Cup Peas
    1/4 Cup Slivered Almonds
    1/2 Boneless, Skinless Chicken Breast

    Dressing:
    3 Tbsp Red Wine Vinegar
    2 Tbsp Olive Oil
    2 Tbsp Dijon Mustard

Directions

Makes 6 3/4-Cup Servings

Salad:
1. Tenderize and cook the chicken breast.
2. Chop up the chicken breast and add to a bowl along with all other Salad ingredients and toss.

Dressing:
1. Thoroughly mix all Dressing ingredients in a jar or small bowl. Store separately from salad.

To Serve:
Drizzle just over 1 Tbsp of Dressing on each 3/4-Cup serving of salad and enjoy.
