Laura's Minestrone Turkey soup

Introduction

A tasty soup that yields a large dutch oven full of taste; about 1 1/2 cups per serving. A tasty soup that yields a large dutch oven full of taste; about 1 1/2 cups per serving.

Ingredients

    Turkey carcass with some meat left on
    3 turkey sausages
    1 large onion, diced
    3 stalks of celery, diced
    1 bay leaf
    2 tbsp of basil, dried
    16 plum tomatoes, with skins removed
    1 tbsp barbeque sauce, smoked chicken is best
    1 cup of marinara sauce
    1-10oz. package of frozen vegetables
    1-20 oz tin of Kidney beans, and 1 20 oz tin of chickpeas
    1 pound of pasta, I used egg noodles chopped into small pieces

Directions

In 10 quart stock pot cover a turkey carcass with water, add onions, celery, bay leaf, and basil. Cook until all of the meat has been removed off the bones. Remove carcass and bay leaf. Chop meat into bite size pieces, add sausages cut into small pieces, and vegetables and noodles and cook until all noodles and vegetables are tender.
