Rustic Tomato Herb Soup

Introduction

A hearty, savory tomato soup; creamy yet only 3 gr of fat per serving. A great way to use up all those tomatoes from your garden; you can even use cherry tomatoes! Ingredients

    10 cups fresh ripe tomatoes, diced
    1 large onion, diced
    5 T fresh basil, chopped or cut into strips with scissors
    5 T fresh oregano
    3 T fresh chives, chopped or cut with scissors
    6 cloves garlic, pressed or minced
    1/2 c fat free half and half
    2 oz fat free cream cheese (or 2 wedges Laughing Cow)
    1 tsp plack pepper
    1 1/2 tsp Morton's light salt (or salt to taste)

Directions

In large pot or dutch oven, carmelize onions in olive oil. Add garlic, basil, oregano, chives and diced tomatoes. Do not peel the tomatoes. You do not need to add any liquid, as the tomatoes will release liquid as they cook. Lower heat to medium, cover and cook for 20 minutes, stirring occasionally. When tomatoes are cooked, let cool a bit and process small batches in food processor or blender for one minute. Return to pot and add fat free half and half and season with salt and pepper. Cut fat free cream cheese into small chunks and stir until melted. Serving is 1 cup. Sprinkle finely chopped herbs on top.

I serve this with a slice of warm, hearty bread and a green salad (not in nutrition calculations)

  • Very good; thanks for sharing! A little tip to add creaminess and protein: stir in some peanut butter! The flavor actually melds really nicely with tomatoes - a tip I picked up from when I lived in Kenya. I'd add about a quarter cup of PB for a pot of soup. - 2/19/13

  • Good taste! I couldn't quite get past the rolled up pieces of tomato skin, even though I blended it thoroughly. I think I'll skin the tomatoes, first, next time. Again, great taste, and fantastic texture, minus the tomato skins. - 11/8/10

  • I use the half and half (half cream, half skim milk I think) for my coffee = its right in the dairy case, and you can get regular or fat free. A capital T means Tablespoon, and tsp means teaspoon. Hope you like the soup! - 9/19/09
