Poblano Chicken Chowder

Introduction

Number of Servings: 3

Ingredients

    1 6 oz cooked chicken breast shredded
    2 cups water
    3 cups frozen corn, divided
    1 can evaporated skim milk
    1/2 Tablespoon olive oil
    2 poblano chilies, seeded & diced
    1 medium onion
    3 cloves garlic, pressed
    1 teaspoon sugar
    1 teaspoon salt
    1/4 teaspoon cayenne pepper
    1 large tomato diced
    1/4 cup feta cheese

    optional add-ins
    chopped fresh cilantro
    sliced avocado
    lime slice

Directions

Shred cooked skinless chicken breast

Puree 1/2 the corn kernals with milk in blender and set aside

in soup pot, heat olive oil, add the chilis, onion and garlic, saute for 5 minutes

Add chicken and 2 cups water or stock(not included in calorie count). Add remaining corn and seasonings. Bring to a boil, reduce heat and simmer for 5 minutes.

Stir in pureed corn, tomato and cheese. Simmer to heat thru and melt cheese.

Ladle into bowls, serves 3
