1 tsp dried oregano
.5 tsp garlic powder
.25 tsp salt
.25 tsp black pepper
1 lb boneless, skinless chicken breasts
1.25 cups reduced sodium, fat-free chicken broth
1 Tbls grated lemon rind
3 Tbls lemon juice
2 tsp light butter
10 oz couscous, uncooked
2. Mix first 4 ingredients and sprinkle over chicken pieces (4)
3. Place chicken on the rack of the broiler and cook ~12 minutes 5-6" from the heat, turning once.
4. Combine broth and next 4 ingredients in a saucepan; bring to a boil. Remove from heat, stir in couscous. Cover and let stand 5 minutes, or until liquid is absorbed and couscous is tender.
5. Spoon couscous onto plate or in a bowl and top with chicken.
Serving is 4 oz of chicken and ~ 1/2 cup couscous
