Healthified Spicy Pumpkin Pancakes

Introduction

Adapted from Betty Crocker's recipe. They also provided a buttery, pecan-filled syrup recipe, but I think I'll stick to my Cary's Sugar-Free :) Adapted from Betty Crocker's recipe. They also provided a buttery, pecan-filled syrup recipe, but I think I'll stick to my Cary's Sugar-Free :)
Number of Servings: 6

Ingredients

    2 1/3 cup Heart Smart Bisquick
    1/3 cup canned pumpkin
    1 1/4 cup skim milk
    1/4 cup unsweetened applesauce
    2 tablespoons sugar
    2 egg whites
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1//4 tsp ginger

Directions

Heat an electric skillet to 375. Mix all ingredients and pour slightly less than 1/4 cupfuls onto heated griddle. Cook on one side till edges bubble and turn brown, then flip and continue cooking until done.

Makes 6 servings.
