1-2 Chicken Breasts
1 Chicken Boullion Cube
1/2 tsp Thyme, ground
1/2 tsp Pepper, red or cayenne
1 pkg frozen Spinach, thawed
12 oz Cottage Cheese, Nonfat
12 Oven ready Lasagna Noodles
1 can Cream of Mushroom Soup, 10.75 oz
1 can Cream of Chicken Soup, 10.75 oz
1 1/2 cups Milk, nonfat
2 cups mozzarella cheese, shredded
1/4 cup Parmesan Cheese, grated
In a small bowl, combine spinach, egg and cottage cheese. In another small bowl, combine soups and milk. In a 13x9 pan, pour 1/3 of the soup mixture and spread on bottom of pan. Lay 4 lasagna noodles on the soup. Layer on 1/2 of the cottage cheese mixture. Top with 1/3 of the mozzarella cheese and then add chicken. Repeat layers. 4 lasagna noodles, the remaining cottage cheese, 1/3 of the mozzarella and the rest of the chicken. Top with the remaining lasagna noodles, soup and cheese. Sprinkle with parmesan. Bake at 350 degrees for 45 minutes or until bubbly.
