Double Chocolate Zucchini muffins

Ingredients

Granulated Sugar, 1.5 cup
*Splenda, 1.5 cup
*Margarine, 70% vegetable oil spread, 1 cup
Egg, fresh, 4 large
Vanilla Extract, 1 tbsp
*Flour, white, 2.5 cup
*Whole Wheat Flour, 2.5 cup
Applesauce, sweetened, 1 cup
**Nestle Mini Chocolate Chips, 1 cup
Great value (walmart) Fat free sour cream, 1 cup
Cocoa, dry powder, unsweetened, .5 cup
Baking Soda, 2 tsp
Salt, 2 tsp
Zucchini, 4 cup, grated
Directions
Preheat oven to 350 degrees.
Combine dry ingredients. In another bowl, combine sugar, splenda, margarine, applesauce, vanilla and eggs. Beat until light, about 5 minutes. Reduce speed to low and add dry ingredients along with the sour cream. Mix until blended. Mix in zucchini. Stir in chocolate chips by hand.
Put in muffin tins lined with muffin papers. (I use an ice cream scoop.) Bake for 20-25 minutes. Cool on rack
