Spaghetti Squash Salad

Introduction

Number of Servings: 3

Ingredients

    4 cups cooked, cooled, shredded and drained spaghetti squash
    12 cherry tomatoes cut in half
    1/2 red bell pepper, diced
    1/2 green bell pepper, diced
    5 scallions, chopped

    Dressing:

    1/4 cup good vinegar
    2 Tablespoons olive oil
    2 cloves garlic, pressed
    dried oregano to taste
    salt and pepper to taste

Directions

Mix all veggies with the squash. Add dressing ingredients to small bowl and blend til frothy. Add to squash and toss until coated. Chill til serving. Cook time is actually chill time. Serves 3

PS. I plan on adding some partially thawed brocolli to mine and possibly some cooked chicken breast, shredded loosely. I will add the chicken at the last minute
