1 1/2 lb fresh eggplant
3/4 tsp salt
1/2 c flour
1/4 c milk
1 1/8 tsp salt
2/3 c bread crumbs
boil in water with salt for about 10 minutes
when cooled dredge the eggplant in flour.
mix egg and mild and dip floured eggplant.
combine salt and breadcrumbs and dredge eggplant in crumb mixture. fry 3 minutes or until golden brown.
