Number of Servings: 4

Ingredients

    1 1/2 lb fresh eggplant
    3/4 tsp salt
    water, cold
    1/2 c flour
    1/4 c milk
    1 egg
    1 1/8 tsp salt
    2/3 c bread crumbs

Directions

peel and slice eggplant either in cubes, slices or rounds depending on what dish your making.
boil in water with salt for about 10 minutes
when cooled dredge the eggplant in flour.
mix egg and mild and dip floured eggplant.
combine salt and breadcrumbs and dredge eggplant in crumb mixture. fry 3 minutes or until golden brown.
