Meringue Crust for ANY pie filling

Introduction

I was so impressed when this actually came out and made a delicious pie. Can be used with any kind of pie filling ( I like the no sugar added cherry and apple from Walmart) but would work wonderfully with sugar free/fat free Jello puddings like lemon or cheese cake! Also, you can top with meringue as well, use the same recipe for the meringue, fill pre-baked crust with filling, top with fresh meringue and bake at 350 for 15 minutes! Enjoy. Ingredients

    2 egg whites (room temp)
    1/4 tsp. Vanilla Extract (or any other flavor like almond)
    1/4 tsp. Cream of Tartar
    1/4 tsp. Salt (optional--depends on how you like your meringue)
    1/2 cup of Splenda (depending on how sweet you like your meringue, this too can be adjusted. I would say at least 1/4 cup minimum.)

Directions

In a clean metal or glass bowl combine egg whites, cream of tartar, and salt. Beat on medium until you get soft peaks. Add vanilla and continue to beat. Gradually add sugar a little at a time until you have glossy, stiff peaks.

Spray a pie dish (or casserole dish) with non-stick spray. Spread meringue in the pie dish and up the sides. Bake at 300 degrees for 45 minutes, turn off the oven and leave meringue in for 1 hour.
