Zucchini Bars

Introduction

Number of Servings: 24

Ingredients

    3/4 cup oil
    1 1/2 cups white sugar
    1 teaspoon vanilla
    1 1/2 teaspoons baking powder
    3/4 cup nuts
    1/2 cup packed brown sugar
    2 eggs
    1 3/4 cups flour
    1 cup flaked coconut
    2 cups shredded unpeeled zucchini
    Frosting
    1 cup powdered sugar
    1 teaspoon vanilla
    2 1/2 teaspoons melted oleo (butter)
    1/3 cup milk

Directions

Directions
1Cream oil until fluffy gradually adding sugars.
2Add eggs one at a time until each is mixed in well.
3Add vanilla.
4Stir in flour and baking powder.
5Add zucchini, coconut, and nuts.
6Spread evenly on cookie sheet.
7Bake at 350 for 40 minutes.
8Frost while warm. ( while making frosting add milk slowly and only enoug to make a glaze. you may need more than the listed amount.). ...Add some cinnamon in with glaze if desired.


Note: nutrition facts are without coconut and nuts as my family does not like those additions.
