Pasta with herbs and cherry tomatoSubmitted by: VMANDALA
1 lb pasta ( I use fettucini or spaghetti)
20 cherry tomatoes
1/4 c dried herbs - a mixture of parsley, basil and oregano
2 tbs olive oil
2 tsp lemon zest
Juice from one lemon
1/4 tsp salt
1/8 tsp pepper
1/2 cup grated Parmesan
While pasta is cooking, cut tomatoes in half
Combine tomatoes, herbs, oil, zest and juice, salt, pepper & parm.
Before draining pasta, reserve 1 cup of pasta water
Drain and toss with tomato mixture.
Add reserved pasta water a bit at a time until it's the consistency that you like.
