Robust Mediterranean Tomato Salad

Introduction

This is a zesty cold salad made with lots of fresh raw tomatoes. Homegrown tomatoes are ideal. This is a zesty cold salad made with lots of fresh raw tomatoes. Homegrown tomatoes are ideal.
Number of Servings: 12

Ingredients

    Tomatoes, 10 large whole (3" dia)
    Kalamata Olives, 15
    Feta Cheese, 8 oz
    Olive Oil, 2 tbsp
    Red Wine Vinegar, 3 tbsp
    Fresh Chopped Basil, 2 tbsp
    Minced Garlic, Garlic, 4 tsp
    fresh chopped chives (optional)
    Black Pepper to taste

Directions

First, wash tomatoes, cut in half, and squeeze halves to remove liquid and seeds. Chop up tomatoes into bite size pieces. Chop olives into smaller pieces, and remove pits. Crumble up an 8 ounce block of feta cheese. Add all ingredients into large bowl and mix well.

*note: I only add salt as I serve it, to avoid making it too watery.
