Healthy Baked Oatmeal

Ingredients

3 C rolled oats
1/2 C brown sugar
2 tsp ground cinnamon
2 tsp baking powder
1 tsp salt
1 C low-fat milk
2 eggs
1 C unsweetened applesauce
2 tsp vanilla extract
Directions
Preheat oven to 350F. Spray bottom of 9 x 13 pan with cooking spray.
In large bowl, mix together oats, sugar, cinnamon, baking powder and salt. In small bowl, mix together milk, eggs applesauce and vanilla extract. Add wet ingredients to dry and mix well. Pour batter into prepared pan and bake for 35 - 40 minutes, or until golden brown. Let cool and cut into 12 squares. Serve reheated or cold with milk. Toppings options for variety: Craisins, raisins, pecan pieces, walnut pieces, extra cinnamon, or chopped fresh apple.
Makes 12 oatmeal squares.
