Almond Chicken with Rice

Introduction

Ingredients

    4 small boneless skinless chicken breasts (1 lb./450 g)
    1/4 cup KRAFT Extra Virgin Olive Oil Tuscan Italian Dressing, divided
    1 can (10 fl oz/284 mL) 25%-less-sodium chicken broth
    1/2 tsp. garlic powder
    2 cups broccoli florets
    1 cup instant white rice, uncooked
    1/4 cup sliced almonds, toasted, divided

Directions


COOK chicken in 2 Tbsp. dressing in large nonstick skillet on medium heat 4 min. on each side or until evenly browned.

STIR in broth, garlic powder and remaining dressing; bring to boil. Cover; simmer 5 min or until chicken is done (170F). Remove chicken; cover to keep warm.

ADD broccoli to skillet; cook, uncovered, 3 min. Stir in rice and 3 Tbsp. nuts. Remove from heat; cover. Let stand 7 min. Serve chicken over rice; top with remaining nuts.

    I absolutely loved this! It was sooo good. I also made it with brown rice. When I put in the broccoli, I also added chopped white onions, water chesnuts, and like a tablespoon of minced garlic. I couldn't get enough of this! Definitely will be making this again... - 10/1/09

    Yum! This was delicious...hubby loved it too. Next time I plan to add some sweet red pepper and cut my chicken into smaller pieces. Very tasty!!! - 9/21/09

    This was incredible! I used brown rice to make it healthier, so I had to cook it a little longer, but it was so good. I can't wait to make it again. I may add more veggies next time as well. Thanks for the great recipe! - 9/20/09

    THIS WAS DELICIOUS!! I haven't given any recipes 5 stars, this one's a keeper. I just used the lowfat italian dressing I had and added leftover brown rice to the broccoli. I did have to add another cup of chicken broth. So good. Definitely a keeper. - 5/5/10

    this was really good! i added onions and some mushrooms... i have a spicy teriyakia sauce, i added 2 tablespoons of that for more flavour. was delicious - 3/6/10

    This Recipe Worked for all of us. I added carrots and Onions. I also used wild rice instead of White. Everyone from the ages of 1-12 and the adults loved it. - 10/28/09

  • Very easy and very good. I cut my chicken into chunks rather than leave it whole....I doubled the sauce, rice, broccoli...and I also added fresh mushrooms...used brown instant rice...everyone loved it. Next time will add more veggies. I ended up stirring the chicken into the rice and veggies. - 9/4/11

  • I made this last night for my boyfriend and 17-year-old daughter. Instead of using 4 "small" breasts I took one large breast and quartered it after trimming the fat. (It was approx. 1lb). I also cooked my rice ahead in the rice cooker as I only use basmati rice. It was a hit! - 8/25/10
