Toasted slivered almonds can be added at the end for a twist. Try going a little lighter on the olive oil or using other spices such as rosemary or thyme. Ingredients

    8 small red potatoes, quartered
    1 pkg. (16 oz.) baby carrots
    3 Tbsp. olive oil
    1 tsp. salt
    1/4 tsp. black pepper

Directions

Place carrots and potatoes on cooking sheet. Sprinkle on olive oil, salt and pepper and toss to coat. Make sure everyting is on one layer. Bake at 400 for 45-50 min.
