These delicious marinated mushrooms are always a hit. Being super simple to make is also a benefit!

Number of Servings: 8

Ingredients

    1 cup apple cider vinegar
    1/2 cup orange juice
    1 Tbs. coriander seeds
    4 sprigs fresh rosemary (divided)
    2 whole bay leaf (divided)
    2 cups small, fresh mushrooms
    4 Tbs. olive oil

Directions

1. Bring the vinegar, orange juice, coriander seeds, 2 sprigs of rosemary, and 1 bay leaf to a boil in a small pan.

2. Add the fresh mushrooms and continue to cook for 3 minutes.

3. Remove the mushrooms and set aside along with the second, fresh batch of 2 sprigs of rosemary and 1 bay leaf.

4. Continue to boil down the liquid until only half remains.

5. Discard the first round of rosemary and bay leaf.

6. Pour the boiled-down liquid over the mushrooms and herbs. Drizzle with the olive oil and cool.

Serve the mushrooms cold or at room temperature with bread or crackers. Mushrooms keep in the refrigerator for one month.

Serving size= 1/4 cup.
