Introduction

This is very yummy, low in fat and one bowl fills you up without weighing you down. Using ground turkey instead of beef is a good way to cut the fat without losing any flavor. This is very yummy, low in fat and one bowl fills you up without weighing you down. Using ground turkey instead of beef is a good way to cut the fat without losing any flavor.
Number of Servings: 6

Ingredients

    1 lb ground turkey (I used 93/7)
    1 medium onion, diced
    3-4 cloves of garlic, minced
    1 can black beans
    1 can kidney beans
    1 can corn
    1 28 oz. can crushed tomatoes
    2-3 Tbs EACH of chili powder and paprika
    Salt and Pepper to taste

Directions

Cook onion, garlic and turkey together in a pot over medium heat until onions are translucent and all of the meat is browned. Stir in seasonings. Add both cans of beans and corn and mix well, then add the crushed tomatoes. Cover and simmer over medium-low heat for about 20 minutes. Feel free to add more seasonings AFTER simmering -- the flavors will combine and condense after you give them a chance to cook through. Fill up a bowl and enjoy! Great with shredded cheese and green onions on top.
