It's Not Swiss Steak

Introduction

Great served with rice, vegetable and salad.

Ingredients

    1 TBS Olive Oil
    1 Medium Onion
    1/2 cup Green Pepper (chopped)
    2TBS Olive Oil
    1 Block Tofu (extra firm)
    1/2 cup Ketchup
    1/4 cup Brown Sugar
    1 1/2 cup water

Directions

1. Saute onions and green pepper in 1 tbs olive oil and set aside. (5 minutes)

2. Slice tofu into 1/2-inch slices, and gently press excess water out of tofu. Cut sliced tofu into 1/2-inch cubes.

3. Brown tofu in 2 TBS olive oil.

4. Combine onions and green pepper with tofu and add ketchup and brown sugar. Simmer for 30 minutes adding 1 1/2 cup water.

Makes 8 1/2 cup servings
