Mexican Rice

Introduction

Family Favorite that's not all that bad on calories for a side! Family Favorite that's not all that bad on calories for a side!
Number of Servings: 5

Ingredients

    1 Tbsp Oil
    1 cup White Rice
    1 cup water
    1/2 can Original Rotel
    2 Tbsp Ketchup
    Salt and Cumin to taste

Directions

Heat oil in pan. Add rice and brown. Once rice is browned add water, rotel and ketchup. Mix until ketchup is well blended. Add some salt and cumin then cover and let simmer. Stir occasionally until water is absorbed. Add more salt and cumin as needed.
