Anna's Canadian Pancakes

Introduction

I got this recipe from Anna, my Canadian friend and just wanted to see if the pancake break-down of calories suggested in the nutrition tracker is right for these. Sure enough - it's only 50 cal per pancake (still enough but far less then the ones tracked). You can add a tbsp of butter to the batch, but I found omitting it would not ruin the recipe. Ingredients


    * Flour, whole grain, 1 cup
    * Baking Soda, 1 tsp
    * Baking Powder, 1 tsp
    * Brown Sugar, 1 tsp unpacked
    * Egg, fresh, 1 medium
    * Milk, 1%, 1 cup
    * Cider Vinegar, 1 tbsp
    * *Canola Oil, 1 tbsp

Directions

Mix the milk with vinegar (buttermilk can be used in lieu) and let sour. Add milk and mix slightly.

Put on skillet to warm up (spray oil)

Combine the dry ingredients - mix in milk/egg mixture just so it combines (lumps can stay!)

One spoonful of mixture per pancake suffices - bake on one side until they bubble through, then turn.
