Introduction

Ingredients

    1 TB olive oil
    2 large onions, chopped
    3 garlic cloves, chopped
    1 lb. bag Split Peas
    1 46 oz. bottle low Sodium V8
    1 zucchinin, chopped

Directions

This makes 6 (1 1/2 cup) servings. Note the cooking time varies as to how long the split peas take to get soft. Saute onions and garlic at medium - medium high heat for 5 minutes in 1 TB olive oil. Add cleaned and sorted Split Peas (this will cook faster if you presoak the peas). Add the V8 juice. Cook for 30 minutes and check the split peas. Check every 15 minutes. When they are close to done (soft), add the zucchini and cook until done. Split peas vary greatly in how long they take to cook--the fresher they are, the faster they cook.
