Mandarin Orange & Wild Rice Chicken

Ingredients

    4 Chicken Breast (boneless, skinless)
    1 Box Uncle Ben's Long Grain Wild Rice
    1 can Mandrain Oranges (6 ounces)
    1 can Mushroom (6 ounces)
    2 T Orange Marmalade
    Salt & pepper to taste

Directions

Pre-heat oven to 375.

Drain, combine & save the juice from the canned oranges and mushrooms.

In a sauce pan, prepare rice as directed using the juices from the oranges and mushrooms in place of water (if necessary add water to match quantity specified on the box of rice).

Add oranges, marmalade and mushrooms to the rice.

Spray 8 x 12 baking dish with non-stick cooking spray.

Season chicken breast with salt & pepper and place in baking dish.

Evenly cover the chicken breast with the rice mixture. Cover with foil (loosely) and bake 30 to 45 minutes at 375 until chicken is done.

Makes 4 1-cup servings.
