IntroductionI know...it sounds too easy to be good...but it really is. I know...it sounds too easy to be good...but it really is.
2 boneless, skinless chicken breasts
2 cans chicken broth
2 cans creamed corn
2 cans black beans (drained and rinsed)
1 can Rotel
serve over rice, topped with any of the following:
cilantro, salsa, grated cheddar cheese, sour cream, tortilla chips, guacamole, etc.
To broth, add all other ingredients. Cut chicken into bite sized pieces and return to broth mixture. Stir and heat until hot.
Serve alone, or over rice, with any toppings that sound good.
