My version of Salsa in a jar

My DH loves the salsa sold in the supermarket. So, I tried to imitate it with the following recipe. Now he loves this so much more that we never buy the jarred salsa for this is so much more healthier without any preservatives and less salt. Yaay!!!!! My DH loves the salsa sold in the supermarket. Ingredients

Onions, raw, .5 medium (2-1/2" dia)
Garlic powder, .5 tsp
*Extra Virgin Olive Oil, .5 tbsp
Poblano Pepper (1) Fresh, .5 , roasted in a toaster oven till soft and toasty with the cut side on a foil wrap, chop fine.
Tomatillos, 1 medium, chopped fine
Red Ripe Tomatoes, 2 large whole (3" dia) chopped fine.
Florid Crystal organic cane sugar, 1.5 tsp ( 1/2 tbsp)
Kosher salt, 0.35 tsp or to taste.
Cilantro, chopped, fresh .25 cup
Trader Joes Organic Wine Vinegar, .5 tbsp
Directions
Fry onion in Olive oil in a non stick pan. Add the chopped tomatillo and poblano pepper. ( if you like extra roasted flavor from the poblano peppers, roast the half with the cut side down in the toaster oven for 5 minutes) Fry till browned and fragrant. Add the tomatoes and red wine vinegar. Let cook till chopped tomatoes are really soft and the mixture is well blended and appears like the salsa in a jar. Stir in the chopped cilantro and let cool. Yields 2 cups or 8 servings of 1/4 cup each at a much lower sodium with no preservatives. Serve wtih ' Food should taste good' tortilla chips. Refrigerate - its never lasted longer than 2-3 days in our home to test to see how long it stays fresh in the fridge!!
