South Beach Taco Salad

Introduction

Great combination of flavors and a fun take-to-work salad. I've made a few changes to the original South Beach Diet recipe but it's still close. Great combination of flavors and a fun take-to-work salad. I've made a few changes to the original South Beach Diet recipe but it's still close.
Number of Servings: 2

Ingredients

    2 Tbs salsa
    2 Tbs fat free greek yogurt, unflavored
    2 cups romaine
    1/2 grape tomatoes, halved
    1/2 cup cubed cooked chicken breast
    1/4 cup shredded reduced fat cheddar cheese
    1/4 cup chopped pitted black olives
    1/2 firm ripe avocado, pitted and cubed
    1 Tbs chopped fresh cilatro

Directions

Combine salsa with 1 Tbs of yogurt in a small bowl to make dressing, cover and refridgerate. In a bowl mix the chicken, tomatoes, olives, cilantro and avocado. Add dressing to bowl and mix. Plate chopped lettuce and layer the mix over, top with remaining yogurt. Serves 2.
