Classic Shepherd's Pie

Ingredients

    4 tsp extra virgin olive oil
    1 cup finely chopped onions
    2 cups sliced carrots
    6 tbsp all-purpose white flour
    2 lbs 93% lean ground turkey
    2 cups frozen cut green beans
    1/2 cup light sour cream
    2 tsp dried basil
    2 tsp dried thyme
    1 tsp table salt
    1/2 tsp black pepper
    1 cup fat free beef broth
    2 2/3 cup instant potato flakes
    2 2/3 cup water
    1 1/4 cup reduced sodium, fat free chicken broth
    1/4 tsp table salt

Directions

Preheat oven to 400 F.

Heat oil in a large skillet over medium-high heat. Add onion, carrots and green beans; cook until soft, about 3 minutes. Add deer and cook until browned, breaking up the meat as it cooks, about 5 minutes. Add flour, basil, thyme, salt and pepper; stir to coat. Add broth and bring to a simmer; simmer until mixture thickens, about 3 minutes.

While meat is cooking, heat water and chicken broth to boiling. Add instant potatoes, mix flakes with liquid according to directions on the box. Once potatoes are made, add sour cream and mix well. Should come out creamy.

Transfer meat mixture to a 9x13 baking dish. Spread mashed potatoes over top and using the back of a spoon, make decorative swirls over the top. Bake until potatoes are golden, about 30 minutes.
