Pasta e Fagioli

Introduction

"Pasta and Beans" This recipe can be made with many types of dry pasta and many different types of beans. It is also good with Ditalini a small tube pasta or in place of the kidney beans try black beans. The choice is up to you. You clean out the refrigerator of all the vegetables and add beans and pasta. In place of the Ground Beef try Ground Turkey. In place of the Italian Sausage use Ground Turkey Italian. Ingredients

    1 # Lean Ground Beef (cooked & drained)
    3 links of Italian Sausage (sliced, cooked and drained)
    1 - Tbs Olive Oil
    1 Large Vidalia Onion diced
    1 cup - Green Beans (canned, fresh or frozen)
    1 cup- Celery (diced)
    1 - med Zucchini (green or yellow summer squash)
    1 - can Stewed Tomatoes (with juice)
    1/2 cup Green Bell peppers (diced)
    1 - can Chicken Broth (low sodium)
    1- can Red Kidney Beans (drained and rinsed)
    1 - can Canellini Beans (drained and rinsed)
    1 1/2 - cups dried Pasta (medium shells, dittalini, elbows, farfalle)

Directions

Brown and drain ground beef, If using Ground Turkey you man need a little olive oil to brown it . Slice Italian sausage cook and drain to remove grease. If you are using Italian Turkey sausage this step may not be necessary. In a large pot add 1 Tbs Olive oil, add diced onion, celery, green pepper and carrots. Cook for 5 minutes uncovered. Drain beans and rinse well in cold water. Add the beans and all remaining ingredients except... Pasta. Cook Soup covered until vegetables are al dente (cooked but slightly crisp) . Add 2 cups of water and pasta, cook another 15 minutes.. When pasta is done Serve. Makes 12 - 1 cup servings.
