Ingredients

    1 cup chopped onion
    1 cup diced celery
    1 cup chopped carrots
    1 cup chopped cabbage
    1 cup chopped cauliflower
    1 cup diced green beans
    1 15 oz can great northern beans
    1 15 oz can 100% pure pumpkin
    1 46 oz bottle Spicy Hot V8 Vegetable Juice
    1 can water
    1 tsp salt
    1 tsp black pepper
    1 Tbsp Spice Hunter Herbes De Provence seasoning
    2 Tbsp olive oil

Directions

Rinse all fresh vegetables, chop or dice and set aside. In a large stock pot cook celery and onion in olive oil over medium heat until transparent. Add all other ingredients. Cover and cook over low heat for 2 hours, stirring occasionally, until all vegetables are tender and broth is rich and smooth. Serve hot. This is a large recipe and unused portions should be cooled and stored in the refrigerator.
