Tofu Chili

Introduction

Number of Servings: 5

Ingredients

    4 TBSP AGAVE NECTAR sweetener
    1 container tofu, cubed into 20 pieces
    1 container tomato paste (10 tbsps), small can
    4 Vine Ripe Tomatoes
    Chili Powder and other desired herbs and spices (watch sodium)
    3 cups kidney beans
    3 cups mixed beans
    * I start with dried beans to reduce sodium, you can use canned or prepare your own beans.

Directions

Prep beans according to package.
Lightly Pulse tomatoes in food processor
Mix all ingredients, save oil, sweetener, and beans, together
Allow tofu to soak in seasonings for 4 hours (can do overnight for extra flavor)
Saute tofu with 1/2 tbsp oil
Mix remaining oil, beans, tofu, and tomatoes together.
Add agave when beans are finished boiling on low for about 30 minutes.
