Ingredients


    Egg, fresh, 2 large
    boiled chicken, 10 oz
    Onion chopped 6 oz
    Celery, raw, 8 oz (by weight)
    Waterchestnuts (water chestnuts), 1 standard can
    Bamboo shoots, cooked, 1 standard can
    Carrots, raw, 1 medium
    Extra Virgin Olive Oil, .1 tsp
    White Rice, long grain, 1.5 cup dry
    Soy Sauce, 3 tbsp

Directions

Prepare white rice in advance and chill it in refrigerator. 1.5 oz of dry rice should yield about three-four cups of prepared rice.
Chop all vegetables finely.. Cube the chicken.
Whisk two eggs in a bowl and fry them. Set them aside.
Heat one tsp of olive oil in wok and lightly saute all other ingredients one at a time, setting them aside in bowl as fried . Fry the rice.
Mix all vegetables, meat and rice together.
Add soy sauce and mix thoroughly
