Spinach Roll

Ingredients

DOUGH
1 cup cottage cheese
1 cup whole wheat flour
1 large fresh egg
FILLING
300 grams chopped frozen spinach (about 1 2/3 cups)
1 cup part skim ricotta cheese
60 grams of light feta cheese
TOPPING
1 cup of unsalted tomato sauce
1/4 cup freshly grated parmesan
Directions
Preheat oven to 350F.
Spray a large bread pan with olive oil spray.
Combine DOUGH ingredients until a soft dough is formed. Roll out on floured surface. You don't want the width of the rolled dough to exceed the length of your pan. You can roll it out to about a 1/3 inch thickness (approx)
Combine FILLING ingredients and spread evenly onto dough. Roll up carefully. The dough will be very delicate. Carefully place into bred pan. Cover with sauce (you may need to use more than 1 cup) and sprinkle with the parmesan.
Cover with foil and bake for 30 minutes. Remove from foil and bake until top is browned and bubbling.
Allow to sit for a few minutes after removing from oven to set.
Cut into thick slices. I like mine served with herbed, diced tomatoes on top.
