Chicken Cacciatore with Homemade Sauce

Introduction

Easy put together chicken dinner. Easy put together chicken dinner.
Number of Servings: 8

Ingredients

    2.25 lbs Chicken Breast, Boneless & Skinless
    7 oz Baby Portabella Mushrooms, sliced thick
    2 Cups Squash, Summer, Zucchini, sliced thick
    6 Cloves Garlic, mashed
    1.5 Cups Tomato Sauce, Homemade

Directions

1. Rinse off Chicken Breasts and place in oven proof pan.
2. Put the sliced vegetables in pan with chicken.
3. Mix mashed Garlic with Homemade Tomato Sauce and then pour over Chicken Breasts.
4. Place in 350 Degree Preheated Oven and cook for 40 minutes.


Do not over cook the chicken breasts. After about 35 minutes, check chicken.

I do not add any salt since the Basic Tomato Sauce already has salt. I will grind some black pepper over the chicken when done.

My husband likes to eat it with Spaghetti, Bread or over rice.

Makes 8 servings of about 4 ozs of Chicken.
