Introduction

This is a re-do of a recipe I found on line. I changed the ingredients so much from the original recipe I wanted to post it here so as not to loose it. Would also be good with some dice chicken added. I eat the whole dish as a meal but this could be halved, especially if adding chicken. This is a re-do of a recipe I found on line. Number of Servings: 2

Ingredients

    shirataki noodles 8 ounce bag
    1 1/2 cup zucchini thick diced
    1 T. parmesan romano cheese
    2 T. chopped parsley (fresh if available)
    2 T. chopped basil (fresh if available)
    1/2 T. light butter
    1/4 ground pepper (optional)
    2 dash salt (to taste, optional)

Directions

1. Drain noodles, rinse well. Squeeze out as much liquid as possible. Put in a bowl and microwave for about 3 minutes. If there is any water left wipe up with a paper towel.
2. Steam zucchini or cook in microwave until crisp tender. Pour of any liquid.
3. Mix the zucchini, parsley, basil, salt, pepper and butter with the noodles and stir well.
4. Plate and sprinkle with parmesan cheese. Enjoy.

Makes one large serving or 2 smaller servings.
