Whole-Wheat Oat Bread

Introduction

I used my bread knife to cut my loaf and I got 18 slices. This recipe came from Tasty Vegan Delights (Gloria Lawson & Debbi Puffer). It was very easy to put together and the results are tasty. Ingredients

    2 teaspoons honey
    1 1/2 cups warm water
    1 tablespoon active yeast
    1 teaspoon salt
    2 1/2 cup whole-wheat flour
    2 tablespoons olive oil
    1/4 cup quick oats
    3 tablespoons gluten flour

Directions

In a mixing bowl, dissolve 2 teaspoons honey in 1 1/2 cups warm water, then stir in 1 tablespoon yeast. Let it stand until the yeast begins to bubble. (about 5 minutes) Stir in :

1 teaspoon salt
1 1/2 cups whole-wheat flour
2 tablespoons olive oil
1/4 cup quick oats

Beat vigorously for 5 minutes with an electric mixer or by hand. Blend in 3 tablespoons gluten flour.

Add 1 cup whole-wheat flour

Knead the mixture into a dough ball. Transfer it to a floured surface and add another 1/4 to 1/2 cup whole-wheat flour until it becomes a nice, soft, pliable dough ball. Knead 3-5 minutes. Shape it into a loaf and let it rise until almost double in size. Bake at 350 degrees F. for 30-35 minutes or until golden on top.

The prep time includes the dough rising. (the time will differ depending on humidity and temperature).

Makes one loaf with approximately 18 slices.
