Jasmine Rice, 2 cup dry (yields 3 cups cooked)
2 boneless skinless chicken breast halves
Margarine-like spread, Country Crock, regular, 3 tbsp
Salt, 1 tsp or to taste
Pepper, black, 2 dash or to taste
boil chicken breasts in salted water until done all the way through, about 15-20 min.
Allow cooked chicken breasts to cool enough to be able to handle them. Place rice in a large serving bowl, & shred chicken. Add Margarine 2-3 tablespoons. Mix chicken, rice, & margarine together evenly. Add salt & pepper to taste. Enjoy! Simple & delicious!!
