4 pieces of flounder (or sole) about 3 oz each
1.5 cup spinach (fresh, baby leaves)
1/3 cup fat free sour cream
1/2 tsp Dijon mustard
1/4 cup panko breadcrumbs
Rince and dry the fish. Divide the spinach in 4 equal portions and place on top of each fillet. Roll the fish, from the pointy side down.
Place on a greased baking dish with the points underneath. In a bown mix sour cream and mustard; Spoon on each fish. Sprinkle with Panko crumbs
Bake uncovered for 15-20 minutes or until the fish flakes easily.
