Turkey-Potato Stuffed Peppers

Number of Servings: 4

Ingredients

    Green Peppers (bell peppers), 3 whole peppers
    Ground Turkey, 1 lb
    Onions, raw, 1 cup, chopped
    Garlic, 3 cloves (minced)
    Jalapeno Peppers, minced - optional; 1 tsp or to taste
    Red Potato, 3 (chopped)
    Salsa, 1 cup
    *Kraft Mexican Style 4 Cheese Blend (2% Milk), 0.5 cup

Directions

Brown turkey with onions, garlic and chopped potato. Add salsa and jalapenos (if desired).

Wash peppers, cut top off. Microwave for 2-3 minutes until slightly tender. Drain well, then stuff with the meat/potato mix.

Stand in pan sprayed with non-stick spray. Bake for 30 min. at 350 degrees. Last 10 minutes, top with shredded cheese.

Serve with a tossed salad for a full meal!
