Cranberry Chicken

Introduction

I friend of mine made this recipe for us and it was so fantastic I just had to post it. I mean this was so good we wanted to put our faces in the dish and lick up every last morsel. It's that yummy.

This dish is a little high in calories, so you will need to plan well to include it in your daily totals- but it will be worth the effort.

Number of Servings: 6

Ingredients

    1 3-pound broiler/fryer chicken cut up
    1/4 teaspoon salt
    1/4 teaspoon pepper
    2 tablespoons light butter

    1/2 cup chopped onion
    1/2 cup chopped celery

    1 can (16 ounces) whole cranberry sauce
    1 cup barbecue sauce (I use Sweet Baby Ray's)

Directions

1. PREHEAT oven to 350

2. SPRINKLE chicken with salt and pepper. In a skillet, melt the butter and then brown the chicken on all sides. Transfer to a greased 13x9 baking pan.

3. SAUTE the onion and celery in the pan drippings until tender (3-5 minutes). Add the cranberry and barbecue sauces, mix well.

4. POUR the sauce over the chicken and bake uncovered for 1 1/2 hours or until the juices run clear, basting every 15-20 minutes.

Note: If you have a high sided baking dish use it as this dish "spits" a bit while cooking and who wants to have to clean their oven.
