Chicken Spinach Meatballs

Introduction

After using my food processor to "grind" some chicken breasts I got on sale, I was very excited to be able to try my hand at some chicken meatballs! My husband said at first glance these appear dry, but definitely do NOT taste dry!

I suppose you could use frozen spinach in this recipe, but we didn't have any on hand, so I just used some fresh spinach finely chopped.

Number of Servings: 3

Ingredients

    1/2 pound ground chicken breast (8 oz)
    20 grams chopped spinach
    1.5 T chopped onion
    2 t. minced garlic
    2 T grated parmesan cheese
    1 T extra virgin olive oil
    salt & pepper to taste (1/8 t. sea salt & 1 t. black pepper included in nutritional info)

Directions

Saute onion, garlic, & spinach in pan until tender in olive oil. Remove from heat and let cool slightly.

Mix onion mixture with ground chicken breast in bowl. (I used a sturdy wooden spoon and just mashed it all together.) Add ~2 T grated parmesan cheese and salt & pepper to taste.

Split mixture into 3 even balls. Split each of 3 into 3 smaller balls. Cooking in pan coated with cooking spray (or in sauce) until cooked through (meat thermometer should read 170 degrees.)

Makes 3 servings of 3 meatballs each.
