Chicken Lo Mein

Number of Servings: 10

Ingredients

    1 1/2 lbs chicken breast cubed
    1 TBS lemon juice
    1/4 C soy sauce
    1/4 C peanut butter
    2 cloves garlic, minced
    1 bushel broccoli OR bag of frozen
    2 TBS oil (your choice)
    1/2 lb speghetti or fetticine noodles, cooked

Directions

Mix peanut butter, soy sauce, garlic and lemone juice in a jar and shake until blended. Cook chicken 2 or 3 minutes. Add broccoli. Cook until tender. Add sauce and noodles. Cook for an additional 3 or 4 minutes until everything is heated through and mixed well.

Makes 10 one cup servings
