Grandma's Zucchini Bread

Introduction

This is a yummy recipe that my grandmother used to make for me when I was a little girl, just the smell of it cooking in the oven reminds me of her. Great for quick breakfast or snack! Number of Servings: 24

Ingredients

    3 cups of Zucchini
    1 2/3 cups sugar
    2/3 cup vegetable oil
    2 tsp. vanilla
    4 large eggs
    3 cups whole wheat flour
    2 tsp. baking soda
    1/2 tsp. baking powder
    1 tsp. salt
    1 tsp. cinnamon
    1/2 tsp cloves
    1/2 cup nuts and rasins (not in nutritional facts)

Directions

Move rack to lower position in oven so that the tops of pans are in the middle of oven. Heat to 350. Grease bottoms of 2 loaf pans with a little shortneing.

Mix wet ingredients in bowl, then stir in remaining ingredients. Divide batter between pans and bake for about 50-60 min. for 8" pan or 70-80 min 9" pan. When done let them cool on wire rack. I usually will freeze mine so that it will cut easily. I then wrap up the individual slices so that it can be a quick breakfast on the go.

Makes 2 loafs 12 slices each.
