Introduction

We cut the grease and used reduced-fat string cheese to re-create a pub favorite.

Ingredients

    4 reduced-fat string cheese sticks
    1 tablespoon flour
    1 cup panko (Japanese bread crumbs)
    1/2 cup egg substitute (or 2 egg whites)
    1 1/2 tablespoon Italian Herb Seasoning Blend

Directions

Preheat the oven to 375 degrees. Spray a baking sheet with cooking spray. Pour the flour onto a small plate.

Cut the cheese sticks in half. Roll the cheese sticks in the flour.

Place the breadcrumbs and Italian herbs in a small container with a lid or zip-top bag and set aside.

Pour the egg substitute into a shallow dish. Using one hand, roll the floured cheese sticks in the egg mixture. One at a time, using your other (dry) hand, transfer the cheese sticks to the bread crumb mixture and shake to coat. Using the dry hand, remove from the crumb mixture and place on the baking pan.

Continue until all the cheese sticks are breaded.

Spritz each cheese stick with cooking spray. Bake for 10 minutes or until cheese is bubbly and melted.

If desired, dunk these cheese sticks in low-sodium tomato sauce (calories not included).

Makes 4 two-stick servings.

    These were great. My tip is to freeze them first after you bread, and then pop them in the oven whenever. That way they wont "deflate" as much. Also, I never input this directly into my tracker because I only use 1/4 cup of panko and one egg white which is plenty for four sticks of cheese. - 9/1/10

    Worked ok. Double coating the sticks worked much better and it took 5 minutes in an electric oven. The double coating also helps to keep it from melting as fast. With only one coat they melted in 3 minutes. Used the same proccess on sliced zuchinni and it turned out great! - 8/24/10

    These are nice and crispy, and the flavor is excellent. I had them with 1/4 cup Catelli Basil Garlic Pizza sauce on the side and felt like I was being very indulgent. I would have given 5 stars but the cooking time of 10 mins is way to long. A lot of the cheese had melted out the ends by then. - 2/25/10

    Re the comment about 150 calories in one cheese stick- the serving size is for 2 cheese sticks. Light string cheese has only 60 calories, 2 would be 120, so the extra 30 calories isn't bad. You could cut the serving down to one if you think it's too much. - 2/19/10

    Made for guests tonight, turned out perfect! I dipped in flour(used wheat flour), then egg, then panko mixture, after all were dipped, I repeated the process...then put them in covered container in frig overnight...served them with homemade marinara dipping sauce...real hit with all my guests!!! - 2/21/10

    Tried this recipe today and tasted really good but I think that the calories listed are more than I calculated. There was enough panko / egg whites to make 3 times the cheese sticks. I paired it with a 1/4 cup of Hunts Garlic / Herb spagetti sauce (only 20 calories) and even my 4 year old liked it - 2/20/10

    Just made these today, and they are very tasty! I used whole beaten eggs because I didn't have Egg Beaters. The only significant change I made was I added some Italian bread crumbs to the panko, I think it helped the texture. I baked them at 400 for 10-12 minutes. Yummy! - 2/28/10

    I question the calorie count on this - the difference is probably nominal, since most of the calories are coming from the cheese. Not all of the flour, egg, panko or herbs are used. The additional calories are being counted, but not consumed. Dangerous for people strick on 1200 calories daily. - 3/6/10

    I would keep the (bare) cheese sticks refrigerated until just ready to use them, or poss put them in freezer for few minutes right before baking to firm them and help lessen the melting. I've made a similiar recipe, but I like her healthier version better. I''m off to find her herb seasoning recipe - 4/22/10

    Maybe its me...but ours didn't turn out looking anything like the picture and we tried twice. The panko crumbs don't brown. They do have a little bit of crunch to them but I'd have to really be craving cheese sticks to redo this one. - 8/9/10

    These were excellent - just like mozzarella sticks! I agree with not cooking them so long, though - mine were a little too melted after only 7 minutes in the oven. They really need very little time to heat up - I won't cook them for more than 5 minutes next time. - 9/7/10

    My son has been begging for mozzerella sticks so I made him some of these for an afternnoon snack. He LOVED it! They didn't stay "sticks" once they melted but I pushed them back into shape and let them cool a bit before serving them. - 3/30/10

    So so. I took the tip of freezing them for a few moments in order to have them not melt too quickly so they could get browned. They didn't really brown. I probably needed to let them go a moment or two longer. May need to try again. - 9/19/10

    The Italian Herb Seasoning Blend had too muck kick for my taste, but my husband loved it. They came out crispy and tasted great otherwise. I'll definitely make these again, but maybe with a different seasoning blend for myself. - 11/10/10

    These were awesome! Gooey, crunchy. 2 things - 1 the cooktime is way too long. Mine were melted cheese pancakes after 5 minutes (bit still yummy!) and 2- I made double the cheese sticks with the same amount of coating and had enough for at least 4 more batches! I'll dbl dip them next time. - 7/15/10

    I think I died and went to heaven. I love cheese sticks and these hit the spot. I agree with another post that said the panko didn't turn golden brown, but it was still good. I used the Pampered Chef Pesto Artichoke seasonings instead of the Italian seasoning and it was really good. - 8/30/10

    These are pretty good, but need some tweaking. 10 minutes would be waaaaaaaay too long. The cheese was already losing shape by 5 minutes, which means they didn't get very crisp or golden by the time I took them out. They taste yummy, and might be worth trying again, if they weren't so much work. - 5/28/10

    This recipe is super easy and is great for surprising people with a healthier way to have finger foods. I fix these when my nieces came for the holidays.
