Ingredients
2 tablespoons olive oil 1 yellow or white onion, chopped (about 1 cup) 3 cloves garlic, minced 2 pounds tomatoes, deseeded, chopped 1/4 teaspoon red pepper flakes 1 tablespoon brown sugar 1/2 teaspoon dried thyme 4 small slices white bread, crust removed 1 1/2 cups low-sodium chicken or vegetable stock 1 tablespoon balsamic vinegar black pepper to taste

Directions
Heat the oil in a stock pot or large saucepan.
Add the onions and garlic; saute for 5 minutes.
Stir in the tomatoes, then add the pepper, sugar, thyme and bread; cook for 3 minutes.
Puree, using an immersion blender or food processor.
If you're using an immersion blender, take care not to splatter tomatoes all over yourself!
Slowly add the stock and simmer for 10 minutes. Add the vinegar and cook another two minutes.
I made this using no-salt added organic diced tomatoes instead of fresh ones (I used 2 cans) and it was very tasty! It is unlike any tomato soup I have ever tasted and pairs very well with a grilled gouda sandwich!

I used the recipe but needed to adapt it to be gluten free. I used cooked acorn squash in this soup and served it to guests who were thrilled. The soup pot was empty. No bread, cheese or brown sugar just 2 cups squash in the blender with the stock Fabulous !

Similar to mine. No bread, but add diced celery, carrots & parsley, a dash of Worcestershire, 1/4 tsp. ground cloves; Cook longer to reduce. For Cream of Tomato, cut stock in half and add that amount of fat-free half & half or fat-free heavy cream. Can use no-salt added diced toms or puree if needed

I make a simplified version of this soup that features basil as the primary herb. One thing you will need to do is to peel the tomatoes first if you want it to be very smooth. I freeze my extra tomatoes in the summer (uncooked, in large chunks, in baggies), then make this soup in the winter.

Used canned diced tomoatoes and it turned out great! Easy to make and it tasted so fresh. I used a regular blender and it was smooth. Next time I will leave out 1/2 a can of tomatoes and add at the end to have chunks of tomato in the soup (like Progresso Hearty Tomato). Will not go back to canned!

This soup is really excellent. I was raised with Campbell tomato soup, but wanted a healthier alternative. The canned soups I found just didn't do the trick. This soup satisfied my comfort food craving. My family even said it was the best soup they ever tasted.

I swapped cilantro for thyme and added roasted red peppers. Yummo! Great way to use up the end of season tomatoes. Will DEFINATELY make again.

Loved this soup. I did find it not smooth enough with my hand blender. I put it in my regular blender and then through a sieve. Very creamy and delicious.

This recipe was great as written, but is so flexible you can use it as a base for a really hearty Vegetable soup. I'm going to use this recipe as the base the next time I make stew!

This is a genius way of making a think hearty soup that would normally be full of fat and empty calories. I loved it! I used canned tomatoes due to the season, but imagine it is divine with fresh tomatoes. Served with a grilled cheese, fantastic!

Sounds delish! The balsamic vineagar at the end makes for an interesting variation. The other thing the Dutch do is put small cooked meat balls in the soup!

I made it yesterday- I loved how rich it was from the bread, but smooth after blending it. I'm making this again!! I need to use less onion and garlic though. I think I would also take the peels off the tomatoes to make it super smooth.

I will definitely use this recipe, with my home grown basil and perhaps skip the brown sugar. Never would have thought to use bread as a thickener in my tomato soup in lieu of cream.

I really enjoyed this recipe, it was easy and quick, my only problem was the spice. It was too much for me which I should have known. I added a can of tomato paste as it didn't have very much tomato flavour for me, but it could have been my tomatoes

Easy recipe. I didn't bother w/skinning or de-seeding the tomatoes~had fresh from our garden tomatoes, yum! used a blender instead, which worked out fine except for the volume which required doing batches. Ran out of vinegar (1/2 T), needed more pepper flakes than listed, don't like blue cheese!

NOTE for Gluten Free I suggest if your bread is denser to use only 1/2 the amount listed. I used 4 oz of Light Tapioca and the soup tastes more like tomato on bread than tomato soup. I'll definitely use less next time.

This recipe is very good as is, but I Roasted my tomatoes in the oven with a garlic clove stuffed in the middle of each one. Peel the skin off the tmatoes before adding to soup.

We replaced red pepper flakes with a little cayenne pepper since that's what we had. It was a little spicier than I would've liked but that was our fault. We also added fresh basil.

i got a couple gallon bags of cherry and grape tomatoes from my neighbor and made this recipe with a few changes. I put the tomatoes through my juicer first. I didn't have white bread but I had hot dog buns so I used those but I pulverized them in my food processor first. smooth and delicious!!

I will be making this, to try it. The canned version's aftertaste makes me nauseous, so I don't eat it. I do have a question, though.. what does the bread do? Just give it body? Thanks. : )

Yummy! i just needed tomato soup yesterday and this hit the spot. I cooked leeks and celery with the onions. Next time i may omit the balsamic vinegar because i wasn't keen on the flavor. Otherwise a keeper!

So thick and tasty...not hard to make and good tomatos are really important like she says. They are the main flavor. I made it exactly like recipe with crustless whole wheat bread and liked the taste and texture.

I used Ezekiel bread and no, I did not cut off the crusts. And no, I did not use the blender at all. It's Pancotta with that bread in it! I like all that texture. We've got ripe home-grown tomatoes now, lucky us!

This was really good! Even my husband, who can't stand the sight of a tomato anywhere near his plate liked it. He surprised me by tasting it and asking for a bowl. The bowl was quickly emptied and clean. Will be making this recipe again. I didn't change a thing.

I made this for lunch today with some tomatoes from the farmers market. It was great it tasted a little spicy but I think that was the red pepper flakes, I tend to be sensitive about that. I am looking forward to another bowl tomorrow and will make again probably without the red pepper Thanks Meg!

This was great! I halved the recipe (I'm the only one in my family that likes tomatoes) and planned on eating 2 big cups of soup. I was a little disappointed to find I only had 2 cups of soup total in the pot! I measured everything carefully, not sure what I did, but it was yummy!

Didn't like the spicy hot from the red pepper and taste BEFORE balsamic addition much better. Used 2 dashes cayenne, half the vinegar. Next time no vinegar & small dash cayenne. My immersion blender made CHUNKS of garlic & onion & tomato skins SMOOTH as silk. Added powdered non-dairy creamer, GOOD!

I was so excited to try this soup, and I must say it's FANTASTIC! I left out all of the things I didn't have (most of the spices....) but I added 'rooster sauce (sorry, I can't spell Worchstershire...or.....whatev er..) and It was fab!!

We made the soup as per the recipe. We still made a mess with the immersion blender and eventually used a regular blender. My family really liked the soup with a grilled Swiss cheese sandwich.

A whole lot more work than I like to do for a mediocre bowl of soup. Not blaming the recipe, but make sure you use good tomatoes. Mine were not in season and the whole thing was a bust.

WOW, this recipe is so good. I had to use the food processor because the immersion blender just wasn't good enough. And it's great with canned tomatoes. Why buy canned tomato soup when you can have this?

I made this w/o adding the bread or blending the soup (I like mine with some texture!). Instead I used the bread for a mini-grilled cheese and dipped it. YUM!

Loved this soup. Very fresh tasting! I used 1 1/2 pounds fresh red and yellow tomatoes and one can of no-salt added diced tomatoes. Used basil instead of thyme and used chicken broth (low sodium) and 1/2 c 1% milk to instead of stock. Blended slightly since I like a chuckier soup. Loved it!

Wonderful! Used up all the tomatoes that were given me. Definitely would make it again. Nice spicy kick! I had to use a bagel cuz I ran out of bread! It was nice and thick!

Delicious! I will make this again. This soup packs a lot of flavor and tummy satisfaction for under 100 cals. Chef Meg has done it again! Seeding and chopping the tomato's was time consuming but well worth it. I was tempted to add salt but resisted and as it turns out, it didn't need any. Great!!

I loved the simplicity of this recipe and that I had all of the ingredients on hand! The only revision was that I used was the ole 28 oz. can of diced tomatoes. Effortless and delightful. I honestly have never had homeade tomato soup before!

After picking a basketful of tomatoes, I decided to try this recipe. I only had a whole sun grain diet type bread so I used what I had and added some silkened tofu to lighten it up. I also used fresh thyme from my garden. This is the best tomato soup I've ever had and it was very quick. Thanks

I found it a little sweet. Will definitely cut--or cut out--the sugar next time. This would be so easy to modify to make a tortilla soup! Very functional basic.

I made this soup, exactly as published... all I have to say, I'm glad I allowed myself two servings... it's out of this world! I used a good hearty bread with pumpkin seeds, so I had to increase the broth by about another 1/2 cup, and adjust the caloric totals. Lovely superb summer soup! Thanks!
