Caramelized Carrots

Number of Servings: 8

Ingredients

    2 tbsp. Olive Oil
    2 lb. Whole small carrots (could substitute baby carrots), halved lengthwise
    4 cloves Garlic, thinly sliced
    2/3 cup Light Whipping Cream
    1 tbsp. flat leaf Parsley

Directions

In extra large skillet, cook carrots, cut sides down, in the heated olive oil. Sprinkle lightly with salt if desired. Cook, covered for 10 minutes. Uncover and turn carrots. Add garlic to skillet. Cover and continue cooking for 10 more minutes or until carrots are tender and both sides are golden brown. During cooking, gently shake skillet occasionally to prevent carrots from sticking.

Transfer carrots to serving plate, cover and keep warm.

Add cream to skillet and bring to boil. Reduce heat, boiling gently uncovered for 2-4 minutes until cream is slightly thickened. Pour over carrots and serve.

Makes 8 servings, 1/2 cup each.

  • I used the splenda brown sugar blend to make it a bit more low cal so . just remember to use 1/2 amount of regular brown sugar. - 4/30/07
