Onions with Pasta Nests

Ingredients

    1 tbsp. Butter (unsalted to cut sodium)
    1 tbsp. Olive Oil
    2 lbs. Sweet onions (any variety), sliced into 1/2 inch rings and separated
    1/4 tsp. Black Pepper
    4 oz. dried Angel Hair pasta (preferably whole wheat)
    1 1/4 cups Water

Directions

In 12-inch skillet heat butter and olive oil over medium heat until butter melts. Add onions and pepper. Cook, covered, for 15 minutes, stirring occasionally. Uncover and cook for additional 10-15 minutes or until onions are tender and browned (stirring frequently). Remove onions from skillet and set aside.

Add pasta to hot skillet. Cook and stir for 4 minutes or until pasta is browned. Add cooked onions and water to skillet. Bring to boiling, then reduce heat. Cover and cook for 5 minutes. Uncover and cook for additional 3-4 minutes or until pasta is tender, stirring occasionally.

Makes 4 servings (3/4 cup each)
